Roasted Carrots with Lentil salsa verde

Slow roasted carrots make for such a great hard salad (not the soft leafy green kind of salad) I love this dish for the contrast, the carrots are sweet and earthy, the lentils salsa verde has a nice pop of brightness and the feta some briny saltiness. Delish room temp or warm.
