Our snap pea & farro salad recipe

recipe for farro salad with snap peas, ricotta salata, cacio e pepe dressing

I love this salad, it is perfect on its own our with a roast chicken or as a snazzy addition to your summer bbq spread. You will be shocked at how really simple it is. Dressing can be made up to 5 days ahead, farro can be cooked and kept for 3 or more days. As you get the hang of this combination you can easily use it and swap out the snap peas for squash in the fall, carrots in the winter.
